Another one of my favorite Little Debbie snacks is cosmic brownies. The fudgy brownie, chocolatey ganache on top and a nice dose of colorful sprinkles ontop is so good when you need some chocolate. So this one had to be part of this series, the recipe is again courtesy of Sugar Spun Run. I’ll post the link below if you want to take a look which you should.

For the Brownies:
- 12 tbsp butter cut into tablespoon size pieces
- 75g cocoa powder
- 200g sugar
- 100g brown sugar
- 1 tsp vanilla extract
- 2 eggs + 1 egg yolk, lightly beaten
- 145g all purpose flour
- 1 tsp cornstarch
- 1/2 tsp salt

Preheat the oven to 350F (177C) then grease a 13×9 pan with baking spray and dust with cocoa powder so they don’t stick later, set aside. Put the butter in a large microwave safe bowl and heat until its completely melted. Then stir in the cocoa powder and mix until combined.
Add brown and granulated sugars, mix well. Add the eggs one at a time, stirring well after each addition. Add in the vanilla, mix until combined and set aside.

In another bowl medium in size, whisk together the flour, cornstarch, and salt (I sifted mine to get rid of any lumps in the flour and cornstarch but it’s not a necessary step.)
Add the dry ingredients in stages mixing until each addition has been mixed throughly.

Spread the batter evenly in the prepared pan and bake for 16-18 minutes depending on your oven.

These smelled AMAZING while they were baking and when I took them out, I had to refrain from eating them straight out of the pan. While these cool, it’s time to make the ganache frosting for the top.
For the frosting:
*The recipe calls for chocolate chips but I used a mixture of milk and dark chocolate Lindt bars because I like the way they melt so nicely but you can use whatever chocolate you have on hand.*
**This recipe is made on the stove but, I made mine in the microwave with the same results.**
- 175g chocolate, chopped
- 1/3 cup heavy cream
- 1 tsp vanilla extract
- 1/8 tsp salt

Break the chocolate into smaller pieces so it’ll melt more evenly, then add the heavy cream to the bowl (microwave safe) and microwave the chocolate and cream mixture in 30 second bursts at half power stirring after each time.

Once all the chocolate has melted, add the salt and vanilla extract. Stir until everything has been combined, set aside to cool to room temperature.

Looks delicious right? Time to pour it over the brownies to create the delicious topping for these amazing brownies.

For the finishing touch, the rainbow sprinkles for the top. I used some candy coated chocolate sprinkles (pictured below) that I had so I could get that classic Little Debbie look.

Sprinkle over the top and let the ganache set for a little bit before cutting into the brownies.

Voila, the finished brownies! They look amazing & taste so good, not exactly like the store bought ones but still they were so good. Will I still buy the store bought ones? Yes, Yes I will but these were so good. If you try this recipe, leave a picture down in the comments so we can all see it.
